Ingredients
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 can Canned diced tomatoes
  • 2 cup Vegetable broth
  • 2 tablespoon Tomato paste
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Coconut milk
  • 4 leaves Fresh basil leaves
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onions are translucent.
  2. Add canned diced tomatoes, vegetable broth, tomato paste, dried basil, dried oregano, salt, and black pepper. Stir well.
  3. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  4. Use an immersion blender or transfer the mixture to a blender and blend until smooth.
  5. Return the mixture to the pot and stir in coconut milk. Cook for an additional 5 minutes.
  6. Serve hot, garnished with fresh basil leaves.
