Ingredients
  • 2 teaspoon Olive oil
  • 1 small Onion
  • 2 medium Carrot
  • 2 medium Celery stalk
  • 2 minced Garlic cloves
  • 4 cup Vegetable broth
  • 1 can Canned diced tomatoes
  • 2 tablespoon Tomato paste
  • 1 can Cannellini beans
  • 1 medium Zucchini
  • 1 cup Green beans
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Pasta
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrot, celery, and garlic. Sauté until vegetables are tender.
  3. Add vegetable broth, diced tomatoes, tomato paste, cannellini beans, zucchini, green beans, and dried herbs.
  4. Season with salt and black pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add pasta and cook until al dente.
  7. Stir in fresh parsley.
  8. Serve hot.
