Ingredients
  • 500 gram Spring cabbage
  • 200 gram Potatoes
  • 100 gram Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until translucent.
  2. Add diced potatoes and cabbage, and cook for another 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes, or until the potatoes are tender.
  4. Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste.
  5. Let the soup rest for 5 minutes before serving.
  6. Garnish with fresh parsley and serve hot.
