Ingredients
  • 2 cup Kale
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 small Red onion
  • 1 piece Lemon
  • 2 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Parmesan cheese
Instructions
  1. Wash and dry the kale leaves. Remove the tough stems and chop the leaves into bite-sized pieces.
  2. Slice the cherry tomatoes in half. Peel and dice the cucumber. Finely chop the red onion.
  3. In a large mixing bowl, combine the kale, cherry tomatoes, cucumber, and red onion.
  4. Squeeze the juice of one lemon over the salad and drizzle with olive oil.
  5. Season with salt and black pepper to taste.
  6. Toss the salad well to ensure all the ingredients are coated with the dressing.
  7. Let the salad rest for a few minutes to allow the flavors to meld.
  8. Serve the kale salad topped with grated Parmesan cheese.
