Ingredients
  • 500 gram Eggplant
  • 4 piece Pita bread
  • 200 gram Cherry tomatoes
  • 150 gram Cucumber
  • 100 gram Red onion
  • 20 gram Fresh parsley
  • 20 gram Fresh mint
  • 2 teaspoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the grill or oven to 400°F (200°C).
  2. Slice the eggplant into 1/2-inch thick rounds.
  3. Brush the eggplant slices with olive oil and season with salt and black pepper.
  4. Grill or roast the eggplant slices for about 10-12 minutes on each side until tender and lightly browned.
  5. While the eggplant is cooking, prepare the pita bread by warming it up in the oven or on the grill.
  6. In a bowl, combine the cherry tomatoes, cucumber, red onion, parsley, mint, lemon juice, olive oil, salt, and black pepper.
  7. Once the eggplant slices are done, remove them from the grill or oven and let them rest for a few minutes.
  8. To assemble the pita, spread some of the tomato-cucumber mixture on one side of the pita bread.
  9. Place a few slices of grilled eggplant on top of the mixture.
  10. Fold the pita in half and serve immediately.
