Ingredients
  • 2 cup Corn kernels
  • 8 ounce Firm tofu
  • 4 cup Vegetable broth
  • 2 teaspoon Soy sauce
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 stalk Scallions
  • 1 teaspoon Sesame oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a large pot, heat sesame oil over medium heat. Add minced garlic and ginger, and sauté for 2 minutes.
  2. Add corn kernels and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Cut tofu into small cubes and add to the pot. Cook for another 5 minutes.
  4. Season with soy sauce, salt, and black pepper. Stir well.
  5. Remove from heat and let the soup rest for 5 minutes.
  6. Serve hot, garnished with chopped scallions.
