Ingredients
  • 2 can Chickpeas
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 teaspoon Ginger
  • 2 medium Tomato
  • 1 can Coconut milk
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Lemon juice
Instructions
  1. Heat oil in a large pan over medium heat. Add chopped onions and cook until golden brown.
  2. Add minced garlic and grated ginger. Cook for another minute.
  3. Stir in chopped tomatoes and cook until they soften.
  4. Add curry powder, turmeric powder, cumin powder, coriander powder, cayenne pepper, salt, and black pepper. Mix well.
  5. Drain and rinse chickpeas. Add them to the pan and stir to coat with the spice mixture.
  6. Pour in the coconut milk and bring to a simmer. Cook for 15-20 minutes, stirring occasionally.
  7. Remove from heat and let it rest for 5 minutes.
  8. Garnish with freshly chopped cilantro and a squeeze of lemon juice.
  9. Serve hot with steamed rice or naan bread.
