Heat oil in a large pan over medium heat. Add chopped onions and cook until golden brown.

Add minced garlic and grated ginger. Cook for another minute.

Stir in chopped tomatoes and cook until they soften.

Add curry powder, turmeric powder, cumin powder, coriander powder, cayenne pepper, salt, and black pepper. Mix well.

Drain and rinse chickpeas. Add them to the pan and stir to coat with the spice mixture.

Pour in the coconut milk and bring to a simmer. Cook for 15-20 minutes, stirring occasionally.

Remove from heat and let it rest for 5 minutes.

Garnish with freshly chopped cilantro and a squeeze of lemon juice.
