Ingredients
  • 500 gram Cauliflower
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Fresh Ginger
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Olive Oil
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, minced garlic, and grated fresh ginger. Sauté until fragrant.
  3. Add cauliflower florets and vegetable stock. Bring to a boil and simmer for 15 minutes or until cauliflower is tender.
  4. Using an immersion blender, blend the soup until smooth and creamy.
  5. Stir in coconut milk, lemon juice, salt, and black pepper. Simmer for another 5 minutes.
  6. Remove from heat and let it rest for 5 minutes.
  7. Serve hot, garnished with fresh herbs or a drizzle of coconut milk.
