Ingredients
  • 2 cup Broccoli
  • 1 cup Quinoa
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh parsley
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.
  2. Add broccoli florets and cook for 5 minutes, stirring occasionally.
  3. Add quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is cooked and broccoli is tender.
  4. Use an immersion blender or transfer soup to a blender to puree until smooth.
  5. Season with salt, black pepper, and lemon juice. Stir well.
  6. Serve hot, garnished with fresh parsley.
