Ingredients
  • 500 gram Apples
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 cup Coconut milk
  • 1 cup Vegetable broth
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Cooking oil
Instructions
  1. Heat cooking oil in a large pan over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add minced garlic and ginger, and cook for another minute.
  4. Stir in curry powder, turmeric powder, and cumin powder.
  5. Add sliced apples and cook until slightly softened.
  6. Pour in coconut milk and vegetable broth, and bring to a simmer.
  7. Cover the pan and let the curry simmer for about 20 minutes.
  8. Stir in lime juice and season with salt.
  9. Garnish with fresh cilantro.
  10. Serve hot with rice or naan bread.
