Add carrots and shiitake mushrooms, and cook for 5 minutes until slightly softened.

Add Chinese cabbage and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.

Stir in soy sauce, salt, and black pepper. Cook for an additional 5 minutes.
