Ingredients
  • 2 cup Frozen peas
  • 2 cup Vegetable broth
  • 1 small Onion
  • 2 clove Garlic
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh mint leaves
  • 1 tablespoon Lemon juice
Instructions
  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add frozen peas and vegetable broth, bring to a boil.
  4. Reduce heat and simmer for 5 minutes.
  5. Remove from heat and let it cool slightly.
  6. Transfer the mixture to a blender and blend until smooth.
  7. Return the soup to the pot and reheat if necessary.
  8. Season with salt, black pepper, fresh mint leaves, and lemon juice.
  9. Stir well and serve hot.
