Ingredients
  • 500 gram Sweet potatoes
  • 1 cup Coconut milk
  • 1 cup Sugar
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/2 teaspoon Vanilla extract
  • 1/2 cup Raisins
  • 1/2 cup Cashew nuts
  • 1/4 cup Shredded coconut
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Peel and chop the sweet potatoes into small cubes.
  3. In a large saucepan, boil the sweet potatoes until tender, then drain.
  4. In a mixing bowl, mash the cooked sweet potatoes until smooth.
  5. Add coconut milk, sugar, ground cinnamon, ground nutmeg, and vanilla extract to the mashed sweet potatoes. Mix well.
  6. Stir in raisins, cashew nuts, and shredded coconut.
  7. Pour the mixture into a greased baking dish.
  8. Bake for 40-45 minutes or until the top is golden brown.
  9. Remove from the oven and let it rest for 30 minutes.
  10. Serve warm and enjoy!
