Ingredients
  • 500 gram Potatoes
  • 2 teaspoon Dijon mustard
  • 3 tablespoon Fresh parsley
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. In a large pot, boil the potatoes until fork-tender. Drain and let cool slightly.
  3. Cut the potatoes into bite-sized pieces.
  4. In a bowl, mix together the Dijon mustard, olive oil, salt, and black pepper.
  5. Add the potatoes to the bowl and toss until well coated.
  6. Spread the potatoes on a baking sheet and roast in the preheated oven for 25-30 minutes, or until crispy and golden brown.
