Ingredients
  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 2 medium Bell peppers
  • 2 medium Carrots
  • 1 medium Zucchini
  • 1 can Canned diced tomatoes
  • 2 can Canned kidney beans
  • 1 can Canned black beans
  • 1 can Canned corn
  • 2 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 cup Vegetable broth
  • 2 tablespoon Fresh cilantro
  • 1 tablespoon Lime juice
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until fragrant.
  3. Add bell peppers, carrots, and zucchini, cook until slightly softened.
  4. Stir in diced tomatoes, kidney beans, black beans, corn, chili powder, cumin, paprika, salt, and black pepper.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Stir in fresh cilantro and lime juice.
  8. Let the chili rest for 5 minutes before serving.
  9. Serve hot and enjoy!
