Delicious Vegetarian Chili
Chili con carne, the non-vegetarian version of chili, originated in Texas in the 19th century and is the official state dish of Texas.

Heat olive oil in a large pot over medium heat.

Add onion and garlic, sauté until fragrant.

Add bell peppers, carrots, and zucchini, cook until slightly softened.

Stir in diced tomatoes, kidney beans, black beans, corn, chili powder, cumin, paprika, salt, and black pepper.

Pour in vegetable broth and bring to a boil.

Reduce heat and simmer for 20 minutes.

Stir in fresh cilantro and lime juice.

Let the chili rest for 5 minutes before serving.
