Ingredients
  • 2 cup Green Peas
  • 1 medium Onion
  • 2 clove Garlic
  • 4 cup Vegetable Stock
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Lemon Juice
  • 2 tablespoon Fresh Mint Leaves
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, and cook until softened.
  3. Add green peas and vegetable stock. Bring to a boil and simmer for 20 minutes.
  4. Remove from heat and let it cool slightly.
  5. Use a blender or immersion blender to puree the soup until smooth.
  6. Return the soup to the pot and reheat. Season with salt, black pepper, and lemon juice.
  7. Serve hot, garnished with fresh mint leaves.
