Ingredients
  • 300 gram Bitter melon
  • 8 ounce Firm tofu
  • 2 unit Eggs
  • 1 unit Onion
  • 2 unit Garlic cloves
  • 2 teaspoon Soy sauce
  • 1 teaspoon Salt
  • 2 tablespoon Vegetable oil
Instructions
  1. Cut the bitter melon in half lengthwise, remove the seeds, and slice into thin half-moons. Sprinkle salt over the bitter melon slices and let them sit for 10 minutes. Rinse and drain.
  2. Cut the tofu into small cubes. Beat the eggs in a bowl.
  3. Heat vegetable oil in a large frying pan or wok over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the bitter melon slices and stir-fry for 2-3 minutes until slightly softened.
  5. Add the tofu cubes and stir-fry for another 2 minutes.
  6. Push the ingredients to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  7. Mix everything together in the pan and add soy sauce. Stir-fry for another minute.
  8. Serve hot with steamed rice.
