Ingredients
  • 400 gram Broccoli
  • 1 small Red Onion
  • 1/2 cup Dried Cranberries
  • 1/4 cup Sunflower Seeds
  • 1/2 cup Greek Yogurt
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Honey
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Instructions
  1. Cut the broccoli into small florets and blanch them in boiling water for 2 minutes. Drain and rinse under cold water.
  2. Finely chop the red onion.
  3. In a large mixing bowl, combine the blanched broccoli, red onion, dried cranberries, and sunflower seeds.
  4. In a separate bowl, mix together the Greek yogurt, lemon juice, honey, salt, and black pepper.
  5. Pour the dressing over the broccoli mixture and toss until well coated.
  6. Let the salad rest in the refrigerator for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled and enjoy!
