Ingredients
  • 2 cup Oats
  • 1 cup Almond flour
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut oil
  • 0.5 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1.5 cup Medjool dates
  • 0.25 cup Water
  • 1 teaspoon Lemon juice
  • 0.5 cup Chopped nuts (optional)
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, combine oats, almond flour, ground cinnamon, baking powder, and salt.
  3. In a small saucepan, melt coconut oil over low heat. Remove from heat and stir in maple syrup and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and mix well.
  5. Press half of the oat mixture into the prepared baking dish to form the crust.
  6. In a food processor, blend dates, water, and lemon juice until smooth.
  7. Spread the date filling evenly over the crust.
  8. Crumble the remaining oat mixture over the date filling.
  9. Optional: Sprinkle chopped nuts over the top.
  10. Bake for 25-30 minutes, or until golden brown.
  11. Allow to cool for 10 minutes before cutting into bars.
