Ingredients
  • 1 medium Onion
  • 4 minced Garlic Cloves
  • 1 inch minced Ginger
  • 2 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1/2 teaspoon Red Chili Powder
  • 2 chopped Tomatoes
  • 1 cup Coconut Milk
  • 1/2 cup Vegetable Stock
  • 2 cup Mixed Vegetables (e.g. carrots, peas, bell peppers)
  • 1/2 teaspoon Salt
  • For garnish chopped Cilantro
  • 2 tablespoon Cooking Oil
Instructions
  1. Heat oil in a pan and sauté onions until golden brown.
  2. Add minced garlic and ginger, and cook for another minute.
  3. Add curry powder, turmeric powder, cumin powder, coriander powder, and red chili powder. Stir well.
  4. Add chopped tomatoes and cook until they soften.
  5. Pour in coconut milk and vegetable stock. Stir and bring to a simmer.
  6. Add mixed vegetables and salt. Cover and cook for 10-15 minutes or until vegetables are tender.
  7. Garnish with chopped cilantro.
  8. Serve hot with rice or naan bread.
