Ingredients
  • 500 gram Sweet potatoes
  • 2 teaspoon Olive oil
  • 2 teaspoon Curry powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 cup Fresh cilantro
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Cut the sweet potatoes into 1/2-inch thick planks.
  3. In a small bowl, mix together the olive oil, curry powder, salt, and black pepper.
  4. Brush both sides of the sweet potato planks with the curry mixture.
  5. Place the planks on a baking sheet and bake for 20-25 minutes, flipping halfway through.
  6. Remove from the oven and let rest for 5 minutes.
  7. Garnish with fresh cilantro before serving.
