Ingredients
  • 2 cup Basmati Rice
  • 2 cup Vegetable Broth
  • 2 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 medium Onion
  • 2 clove Garlic
  • 1 inch Ginger
  • 1 cup Mixed Vegetables (carrots, peas, corn)
  • 1 cup Coconut Milk
  • 1 teaspoon Salt
  • 2 tablespoon Cilantro
  • 4 wedge Lime
Instructions
  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large pot, add the vegetable broth and bring it to a boil.
  3. Add the rinsed rice, curry powder, turmeric powder, and cumin powder to the pot. Stir well.
  4. Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and all the liquid is absorbed.
  5. While the rice is cooking, heat some oil in a pan and sauté the chopped onion, minced garlic, and grated ginger until fragrant.
  6. Add the mixed vegetables to the pan and cook until they are tender.
  7. Once the rice is cooked, fluff it with a fork and add the cooked vegetables to the pot. Mix well.
  8. Stir in the coconut milk and season with salt to taste.
  9. Cover the pot and let the flavors meld for 5 minutes.
  10. Serve the curry flavored rice mix garnished with fresh cilantro and a squeeze of lime juice.
