Ingredients
  • 4 cup Vegetable broth
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 medium Carrots
  • 2 medium Potatoes
  • 1 cup Cauliflower florets
  • 1 cup Green beans
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric powder
  • 1 cup Coconut milk
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Heat vegetable broth in a large pot over medium heat.
  2. Add chopped onion and minced garlic cloves. Sauté until onion is translucent.
  3. Add sliced carrots, diced potatoes, cauliflower florets, and green beans. Stir well.
  4. Sprinkle curry powder and turmeric powder over the vegetables. Mix until well coated.
  5. Pour in coconut milk and lime juice. Season with salt and black pepper.
  6. Bring the soup to a boil, then reduce heat and simmer for 20 minutes or until the vegetables are tender.
  7. Serve hot, garnished with fresh cilantro.
