Ingredients
  • 500 gram Sweet potatoes
  • 1 piece Onion
  • 2 piece Garlic cloves
  • 2 teaspoon Curry powder
  • 1 cup Coconut milk
  • 4 cup Vegetable broth
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
Instructions
  1. Peel and chop the sweet potatoes, onion, and garlic cloves.
  2. Heat olive oil in a large pot over medium heat.
  3. Add the chopped onion and garlic cloves to the pot and sauté until fragrant.
  4. Add the curry powder and stir for a minute.
  5. Add the sweet potatoes, vegetable broth, coconut milk, salt, and black pepper to the pot.
  6. Bring the mixture to a boil, then reduce the heat and simmer for about 20 minutes or until the sweet potatoes are tender.
  7. Use an immersion blender or a regular blender to puree the soup until smooth.
  8. Stir in the lime juice.
  9. Serve hot and garnish with additional black pepper if desired.
