Ingredients
  • 500 gram Sweet Potato
  • 300 gram Carrot
  • 1 piece Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry Powder
  • 1 cup Coconut Milk
  • 4 cup Vegetable Stock
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Cilantro
  • 2 tablespoon Lime Juice
Instructions
  1. Peel and chop the sweet potato, carrot, onion, garlic, and ginger.
  2. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  3. Add the sweet potato, carrot, and curry powder, and cook for a few minutes.
  4. Pour in the vegetable stock and coconut milk, and bring to a boil.
  5. Reduce the heat and simmer for about 20 minutes, or until the vegetables are tender.
  6. Use an immersion blender or a regular blender to puree the soup until smooth.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with cilantro and a squeeze of lime juice.
