Ingredients
  • 300 gram Spinach
  • 1 small Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 cup Coconut milk
  • 2 cup Vegetable broth
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Heat oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook until onion is translucent.
  2. Add curry powder and cook for another minute.
  3. Add spinach and cook until wilted.
  4. Add coconut milk and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Use an immersion blender or transfer to a blender to puree the soup until smooth.
  6. Stir in lemon juice, salt, and black pepper.
  7. Let the soup rest for 5 minutes before serving.
  8. Serve hot and enjoy!
