Ingredients
  • 1 cup Red Lentils
  • 1 medium Onion
  • 3 clove Garlic Cloves
  • 1 teaspoon Ginger
  • 2 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 4 cup Vegetable Stock
  • 1 cup Coconut Milk
  • 2 tablespoon Lime Juice
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Rinse the red lentils under cold water.
  2. In a large pot, heat some oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
  3. Add the curry powder, turmeric powder, and cumin powder. Stir well.
  4. Add the rinsed lentils and vegetable stock. Bring to a boil and then reduce the heat to simmer for 20 minutes, or until the lentils are cooked.
  5. Stir in the coconut milk, lime juice, salt, and black pepper. Simmer for another 5 minutes.
  6. Serve the soup hot, garnished with fresh cilantro.
