Ingredients
  • 1 cup Red Lentils
  • 1 medium Onion
  • 2 clove Garlic Cloves
  • 1 teaspoon Ginger
  • 2 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 2 medium Tomatoes
  • 1 cup Coconut Milk
  • 1 tablespoon Lemon Juice
  • 2 tablespoon Fresh Cilantro
  • 1 teaspoon Salt
  • 2 cup Water
Instructions
  1. Rinse the red lentils and set aside.
  2. In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.
  3. Add the curry powder, turmeric powder, cumin powder, and coriander powder. Stir well.
  4. Add the tomatoes and cook until they soften.
  5. Add the red lentils, coconut milk, lemon juice, salt, and water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes or until the lentils are cooked and the flavors are well combined.
  6. Serve hot, garnished with fresh cilantro.
