  • 500 gram Pumpkin
  • 100 gram Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry Powder
  • 1 cup Coconut Milk
  • 1 cup Vegetable Stock
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 10 gram Cilantro
Instructions
  1. Heat oil in a pan and saute onions, garlic, and ginger.
  2. Add curry powder and cook for a minute.
  3. Add pumpkin, coconut milk, vegetable stock, salt, and pepper.
  4. Simmer for 20-25 minutes until the pumpkin is tender.
  5. Garnish with cilantro and serve hot with rice or bread.
