Ingredients
  • 1 cup Lentils
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 can Tomatoes
  • 1 can Coconut milk
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
  • 2 tablespoon Lemon juice
Instructions
  1. Rinse the lentils and set aside.
  2. In a large pot, heat oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
  3. Add the curry powder, turmeric, cumin, and coriander to the pot and cook for another minute.
  4. Stir in the lentils, tomatoes, coconut milk, salt, and black pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 25-30 minutes until the lentils are tender.
  6. Stir in the cilantro and lemon juice.
  7. Serve hot with rice or naan bread.
