Ingredients
  • 1 cup Red lentils
  • 1 medium Butternut squash
  • 1 large Apple
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 teaspoon Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Rinse the lentils and set aside.
  2. Peel and dice the butternut squash and apple.
  3. Chop the onion and mince the garlic cloves.
  4. In a large pot, heat some oil over medium heat. Add the onion and garlic, and sauté until fragrant.
  5. Add the curry powder, cumin, and coriander to the pot and stir for a minute.
  6. Add the lentils, butternut squash, apple, vegetable broth, coconut milk, lemon juice, salt, and black pepper to the pot.
  7. Bring the stew to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils and squash are tender.
  8. Stir in the fresh cilantro.
  9. Serve the stew hot with rice or bread.
