Ingredients
  • 1 cup Red lentils
  • 2 medium Carrots
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
Instructions
  1. Rinse the lentils and set aside.
  2. In a large pot, heat some oil over medium heat.
  3. Add the onion, garlic, and ginger. Sauté until fragrant.
  4. Add the carrots, curry powder, cumin, and coriander. Cook for 5 minutes.
  5. Add the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender.
  6. Stir in the coconut milk, lemon juice, salt, and black pepper. Cook for an additional 5 minutes.
  7. Serve hot, garnished with fresh cilantro.
