Ingredients
  • 500 gram Eggplant
  • 1 medium Onion
  • 2 cloves Garlic Cloves
  • 1 teaspoon Ginger
  • 2 medium Tomato
  • 2 teaspoon Curry Powder
  • 1 teaspoon Turmeric Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Salt
  • 2 tablespoon Vegetable Oil
  • 2 tablespoon Fresh Cilantro
Instructions
  1. Cut the eggplant into cubes and soak in salted water for 10 minutes.
  2. In a pan, heat vegetable oil and sauté the onion, garlic, and ginger until fragrant.
  3. Add the tomatoes and cook until they soften.
  4. Drain the eggplant and add it to the pan. Stir in the curry powder, turmeric powder, cumin powder, coriander powder, and salt.
  5. Cover and simmer for 15-20 minutes, or until the eggplant is tender.
  6. Garnish with fresh cilantro before serving.
