Ingredients
  • 500 gram Cauliflower
  • 1 medium Onion
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 2 teaspoon Curry powder
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 1 cup Coconut milk
  • 2 tablespoon Tomato paste
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 2 tablespoon Cooking oil
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Cut the cauliflower into florets and place them on a baking sheet. Drizzle with cooking oil, salt, and black pepper. Roast in the oven for 20 minutes, or until golden brown.
  3. In a large pan, heat cooking oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  4. Add curry powder, turmeric powder, cumin powder, and coriander powder to the pan. Stir well to coat the onions and spices.
  5. Pour in coconut milk and tomato paste. Stir until well combined.
  6. Add the roasted cauliflower florets to the pan and stir gently to coat them with the curry sauce. Simmer for 5 minutes.
  7. Stir in lemon juice and season with salt to taste.
  8. Garnish with fresh cilantro before serving.
  9. Serve hot with rice or naan bread.
