Ingredients
  • 500 gram Cauliflower
  • 1 medium Onion
  • 2 clove Garlic
  • 2 teaspoon Curry powder
  • 4 cup Vegetable broth
  • 1 cup Coconut milk
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
Instructions
  1. In a large pot, heat some oil and sauté the onion and garlic until translucent.
  2. Add the curry powder and cook for another minute.
  3. Add the cauliflower and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the cauliflower is tender.
  4. Using an immersion blender or regular blender, blend the soup until smooth.
  5. Stir in the coconut milk, lime juice, salt, and black pepper. Cook for another 5 minutes.
  6. Serve hot, garnished with cilantro.
