Ingredients
  • 300 gram Carrots
  • 200 gram Pineapple chunks
  • 1 piece Onion
  • 2 piece Garlic cloves
  • 2 teaspoon Curry powder
  • 1 cup Coconut milk
  • 2 tablespoon Vegetable oil
  • 1 teaspoon Salt
  • 4 sprig Cilantro leaves
Instructions
  1. Heat vegetable oil in a pan over medium heat.
  2. Add chopped onion and minced garlic cloves. Sauté until onion turns translucent.
  3. Add curry powder and cook for a minute.
  4. Add carrot slices and pineapple chunks. Stir-fry for 5 minutes.
  5. Pour coconut milk and season with salt. Simmer for 10 minutes.
  6. Garnish with cilantro leaves.
  7. Serve hot with rice or bread.
