Ingredients
  • 2 cup Black Beans
  • 1 medium Onion
  • 3 clove Garlic
  • 1 medium Green Bell Pepper
  • 1 medium Carrot
  • 1 medium Celery Stalk
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Oregano
  • 1 piece Bay Leaf
  • 4 cup Vegetable Stock
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 wedge Lime
  • 4 tablespoon Fresh Cilantro
Instructions
  1. Rinse and soak the black beans overnight.
  2. In a large pot, sauté the onion, garlic, green bell pepper, carrot, and celery until softened.
  3. Add the soaked black beans, cumin, oregano, bay leaf, and vegetable stock to the pot.
  4. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.
  5. Remove the bay leaf and blend half of the soup until smooth.
  6. Return the blended soup to the pot and season with salt and black pepper.
  7. Serve hot with a squeeze of lime and a sprinkle of fresh cilantro.
