Ingredients
  • 2 cup Black beans
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 medium Green bell pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 2 leaf Bay leaves
  • 4 cup Vegetable broth
  • 2 tablespoon Lime juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Cilantro
  • 1 medium Avocado
  • 4 tablespoon Sour cream
Instructions
  1. Rinse and soak the black beans overnight.
  2. In a large pot, sauté the onion, garlic, and green bell pepper until softened.
  3. Add the soaked black beans, cumin, oregano, bay leaves, and vegetable broth to the pot.
  4. Bring to a boil, then reduce heat and simmer for about 1 hour or until the beans are tender.
  5. Remove the bay leaves and blend half of the soup until smooth.
  6. Return the blended soup to the pot and stir in lime juice, salt, and black pepper.
  7. Serve hot, garnished with cilantro, avocado slices, and a dollop of sour cream.
