Ingredients
  • 2 cup Black beans
  • 1 cup White rice
  • 1 medium Onion
  • 1 medium Green bell pepper
  • 2 clove Garlic cloves
  • 1 teaspoon Cumin powder
  • 1 teaspoon Oregano
  • 1 leaf Bay leaf
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 4 unit Lime wedges
Instructions
  1. Rinse the black beans and soak them overnight.
  2. In a large pot, heat olive oil over medium heat. Add onion, bell pepper, and garlic. Sauté until softened.
  3. Add cumin powder, oregano, and bay leaf. Stir for a minute.
  4. Drain the soaked black beans and add them to the pot. Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for about 45 minutes or until beans are tender.
  5. While the beans are cooking, cook the rice separately according to package instructions.
  6. Once the beans are cooked, remove the bay leaf and season with salt and black pepper.
  7. Serve the beans over a bed of rice. Garnish with fresh cilantro and lime wedges. Enjoy!
