In a small bowl, mix soy sauce, sesame oil, cornstarch, water, salt, and black pepper to make the sauce.

Heat vegetable oil in a wok or large skillet over high heat.

Add garlic and ginger, and stir-fry for 1 minute.

Add broccoli, carrots, bell peppers, snow peas, and mushrooms. Stir-fry for 3-4 minutes, until vegetables are crisp-tender.

Pour the sauce over the vegetables and stir-fry for another 2 minutes.

Remove from heat and let it rest for 5 minutes.
