  • 1 cup Red bell pepper
  • 1 cup Carrot
  • 1/2 cup Red onion
  • 1/2 cup Celery
  • 1/4 cup Fresh parsley
  • 1/4 cup Sunflower seeds
  • 2 tablespoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. In a large bowl, combine green peas, red bell pepper, carrot, red onion, celery, fresh parsley, and sunflower seeds.
  2. In a small bowl, whisk together lemon juice, olive oil, Dijon mustard, salt, and black pepper.
  3. Pour the dressing over the salad and toss to combine.
