  • 1 medium Onion
  • 2 medium Carrots
  • 2 medium Celery stalks
  • 3 clove Garlic cloves
  • 2 medium Potatoes
  • 2 medium Zucchini
  • 1 can Canned diced tomatoes
  • 4 cup Vegetable broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 2 leaf Bay leaves
  • 1 can Cannellini beans
  • 1 cup Pasta
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Chop the onion, carrots, celery, garlic, potatoes, and zucchini.
  2. In a crockpot, combine the chopped vegetables, canned diced tomatoes, vegetable broth, dried thyme, dried oregano, and bay leaves.
  3. Cook on low heat for 6-8 hours or on high heat for 3-4 hours.
  4. Add the cannellini beans and pasta to the crockpot and cook for an additional 30 minutes.
  5. Season with salt and black pepper.
  6. Serve hot, garnished with fresh parsley.
