  • 1 cup Lentils
  • 4 cup Vegetable broth
  • 2 medium Carrots
  • 2 medium Celery stalks
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Fresh parsley
  • 1 tablespoon Lemon juice
Instructions
  1. Rinse the lentils under cold water.
  2. In a crockpot, combine the lentils, vegetable broth, carrots, celery, onion, garlic, cumin, paprika, turmeric, salt, and black pepper.
  3. Cover and cook on low heat for 4 hours or until the lentils are tender.
  4. Stir in fresh parsley and lemon juice.
