Ingredients
  • 500 gram Spinach
  • 300 gram Potatoes
  • 1 piece Onion
  • 2 cloves Garlic
  • 500 milliliter Vegetable broth
  • 2 tablespoon Olive oil
  • 10 gram Parsley
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Instructions
  1. Wash the spinach and remove any tough stems.
  2. Peel and dice the potatoes.
  3. Finely chop the onion and garlic.
  4. Heat olive oil in a large pot over medium heat.
  5. Add the onion and garlic and sauté until translucent.
  6. Add the potatoes and vegetable broth to the pot.
  7. Bring to a boil and then reduce heat to a simmer.
  8. Cook for about 15 minutes or until the potatoes are tender.
  9. Add the spinach, parsley, salt, and pepper to the pot.
  10. Stir well and cook for another 5 minutes or until the spinach wilts.
  11. Remove from heat and let it rest for a few minutes.
  12. Serve hot and enjoy!
