Ingredients
  • 2 cup Black-eyed peas
  • 1 medium Onion
  • 1 medium Green bell pepper
  • 2 medium Celery stalks
  • 3 clove Garlic cloves
  • 1 can Diced tomatoes
  • 2 cup Vegetable broth
  • 1 leaf Bay leaf
  • 1 teaspoon Thyme
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 stalks Green onions
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the black-eyed peas and soak them overnight.
  2. In a large pot, sauté the onion, bell pepper, celery, and garlic until softened.
  3. Add the soaked black-eyed peas, diced tomatoes, vegetable broth, bay leaf, thyme, paprika, cayenne pepper, salt, and black pepper to the pot.
  4. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the peas are tender.
  5. Remove the bay leaf and stir in the chopped green onions and parsley.
  6. Let the dish rest for 10 minutes before serving.
