Ingredients
  • 500 gram Fava beans
  • 1 medium-sized Onion
  • 2 minced Garlic cloves
  • 2 medium-sized Potatoes
  • 2 tablespoon Olive oil
  • 750 milliliter Vegetable broth
  • 1 dried Bay leaf
  • For garnish chopped Parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. In a large pot, heat olive oil over medium heat. Add minced garlic and chopped onion, and sauté until translucent.
  2. Add peeled and diced potatoes, bay leaf, and vegetable broth to the pot. Bring to a boil and simmer until the potatoes are tender.
  3. Meanwhile, blanch the fava beans in boiling water for 3-4 minutes. Drain and peel off the tough skin from each bean.
  4. Once the potatoes are cooked, remove the bay leaf and transfer the soup to a blender. Blend until smooth.
  5. Return the blended soup to the pot and add the peeled fava beans. Season with salt and black pepper.
  6. Simmer for an additional 5-10 minutes, allowing the flavors to meld together.
  7. Serve hot, garnished with chopped parsley.
