  • 2 pound Potatoes
  • 2 tablespoon Olive oil
  • 2 clove Garlic
  • 1 cup Vegetable broth
  • 1/2 cup Coconut milk
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Peel and dice the potatoes.
