Ingredients
  • 1.5 cup Rolled oats
  • 0.5 cup Almond flour
  • 0.5 cup Dried cranberries
  • 1 teaspoon Orange zest
  • 3 tablespoon Maple syrup
  • 2 tablespoon Coconut oil
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine rolled oats, almond flour, dried cranberries, orange zest, baking powder, and salt.
  3. In a separate bowl, whisk together maple syrup, coconut oil, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and mix until well combined.
  5. Line a baking sheet with parchment paper.
  6. Scoop tablespoon-sized portions of the dough onto the baking sheet, spacing them apart.
  7. Flatten each portion with the back of a spoon.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  10. Transfer the cookies to a wire rack to cool completely.
